Vegetable Sushi Rolls Recipe

Ingredients:
– 1 cup sushi rice
– 1 ¼ cups water
– 2 tablespoons rice vinegar
– 1 tablespoon sugar
– ½ teaspoon salt
– 4 nori sheets
– 1 medium carrot, julienned
– 1 cucumber, julienned
– 1 bell pepper (any color), julienned
– Optional: avocado slices, sesame seeds
Instructions:
1. Rinse the sushi rice under cold water until the water runs clear. This helps remove excess starch.
2. In a pot, combine the rinsed rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes.
3. In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Once the rice is cooked, remove it from heat and let it sit covered for 10 minutes.
4. Transfer the rice to a large bowl and gently fold in the vinegar mixture. Allow the rice to cool to room temperature.
5. Place a nori sheet on a bamboo sushi mat (or a clean surface) with the shiny side down.
6. With wet hands, spread a thin layer of sushi rice over the nori, leaving about 1 inch at the top edge.
7. Arrange your choice of veggies horizontally across the rice in the center. Add avocado or sesame seeds if desired.
8. Starting from the bottom, carefully roll the sushi away from you, pressing gently to keep the roll tight.
9. Once rolled, use a sharp knife to slice the sushi into bite-sized pieces.
10. Serve with soy sauce or a mild dipping sauce and enjoy this fun, healthy meal together!
