Ingredients:

– 1 cup mashed sweet potatoes (about 1 medium sweet potato)

– 1 cup rolled oats

– 2 large eggs

– 1 teaspoon ground cinnamon

– 1/2 teaspoon baking powder

– A pinch of salt

– 1/4 cup milk (dairy or non-dairy)

– Coconut oil or butter for cooking

– Pure maple syrup or yogurt for serving

Instructions:

1. Begin by cooking the sweet potato. You can either bake, steam, or microwave it until tender. Once cooked, let it cool slightly, then mash it until smooth.

2. In a large mixing bowl, combine the mashed sweet potato, rolled oats, eggs, cinnamon, baking powder, and salt. Mix well until all ingredients are fully incorporated.

3. Gradually add the milk to the mixture to achieve your desired batter consistency. If the batter is too thick, add a little more milk.

4. Heat a non-stick skillet over medium heat and add a small amount of coconut oil or butter to coat the surface.

5. Pour about 1/4 cup of batter onto the skillet for each pancake. Cook for 3-4 minutes or until bubbles form on the surface, then flip and cook for an additional 2-3 minutes until golden brown.

6. Transfer the pancakes to a plate and keep warm while you repeat the process with the remaining batter.

7. Serve the pancakes warm, topped with a drizzle of pure maple syrup or a dollop of yogurt for added flavor and nutrition.
