Quinoa and Veggie Bowls - Healthy Toddler Recipes

Ingredients:

– 1 cup quinoa
– 2 cups water or vegetable broth
– 1 cup bell peppers, diced (any color)
– 1 cup carrots, diced
– 1 cup peas (fresh or frozen)
– 1/2 cup cheese (cheddar or mozzarella works well)
– 2 tablespoons olive oil
– Salt and pepper to taste
– Optional: fresh herbs for garnish

Instructions:

1. Rinse the quinoa under cold water to remove any bitterness.

2. In a saucepan, combine the rinsed quinoa and water or vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes, or until the quinoa is fluffy and the liquid is absorbed.

3. While the quinoa is cooking, heat olive oil in a large skillet over medium heat.

4. Add the diced bell peppers and carrots to the skillet, sautéing for about 5-7 minutes until they begin to soften.

5. Stir in the peas and cook for an additional 2-3 minutes. Season the vegetables with salt and pepper to taste.

6. Once the quinoa is cooked, fluff it with a fork and mix it into the sautéed vegetables in the skillet.

7. Remove from heat and sprinkle cheese on top, allowing it to melt slightly from the residual heat.

8. Serve the quinoa and veggie mix in colorful bowls, drizzling with a little extra olive oil if desired.

9. Garnish with fresh herbs for an added touch of flavor and color, and enjoy a meal that even fussy eaters will love!
