Cheesy Veggie Quesadillas Recipe

Ingredients:
– 4 whole wheat tortillas
– 1 cup shredded cheese (cheddar or mozzarella works great)
– 1/2 cup bell peppers, finely chopped (mix of colors)
– 1/2 cup fresh spinach, chopped
– 1 tablespoon olive oil
– Guacamole or mild salsa for dipping
Instructions:
1. Heat the olive oil in a skillet over medium heat.
2. Place one tortilla in the skillet and sprinkle half of the shredded cheese evenly over it.
3. Add the chopped bell peppers and spinach on top of the cheese, then sprinkle the remaining cheese over the veggies.
4. Top with another tortilla and cook for about 2-3 minutes, or until the bottom is golden brown and crispy.
5. Carefully flip the quesadilla and cook for another 2-3 minutes on the other side.
6. Remove from the skillet and let it cool for a minute before cutting.
7. Use cookie cutters to cut the quesadillas into fun shapes.
8. Serve with a side of guacamole or mild salsa for dipping.
These quesadillas are not only fun to eat but also a great way to sneak in some veggies for those fussy eaters!
