Colorful Vegetable Soup - Toddler-Approved Recipes

Ingredients:

– 2 medium carrots, diced
– 1 cup frozen peas
– 2 medium potatoes, peeled and diced
– 1 onion, chopped
– 2 cloves garlic, minced
– 4 cups vegetable broth
– 1 teaspoon dried thyme
– Salt and pepper to taste
– 1 tablespoon olive oil

Instructions:

1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion becomes translucent.

2. Add the diced carrots and potatoes to the pot. Stir well and cook for about 5 minutes.

3. Pour in the vegetable broth and bring to a boil. Once boiling, reduce the heat and let it simmer for 15-20 minutes, or until the veggies are tender.

4. Stir in the frozen peas and thyme, cooking for an additional 5 minutes.

5. If you prefer a smooth texture, use an immersion blender to puree the soup to your desired consistency. For a chunkier version, simply leave it as is.

6. Season with salt and pepper to taste before serving.

7. Ladle the soup into kid-sized bowls and enjoy this nutritious recipe with your little one!
