Ingredients:

– 1 medium zucchini, grated
– 1 medium carrot, grated
– 1 medium sweet potato, grated
– 1 large egg
– ½ cup whole wheat flour
– ½ teaspoon salt
– ½ teaspoon pepper
– 1 teaspoon garlic powder (optional)
– Olive oil or cooking spray (for frying)
– Assorted dipping sauces (for serving)

Instructions:

1. Start by grating the zucchini, carrot, and sweet potato. Use a clean kitchen towel to squeeze out excess moisture from the grated vegetables.

2. In a large mixing bowl, combine the grated vegetables, egg, whole wheat flour, salt, pepper, and garlic powder. Mix until well combined.

3. Heat a frying pan over medium heat and add a little olive oil or cooking spray.

4. Scoop tablespoon-sized portions of the mixture into the pan, flattening them slightly to form fritters.

5. Cook for about 3-4 minutes on each side or until golden brown and crispy.
