Spinach and Cheese Stuffed Shells - Toddler-Approved Recipes

Ingredients:

– 12 large pasta shells
– 1 cup ricotta cheese
– 1 cup shredded mozzarella cheese
– 1 cup fresh spinach, chopped (or ½ cup frozen spinach, thawed and drained)
– 1 egg (optional, for binding)
– 2 cups marinara sauce
– ¼ teaspoon garlic powder
– ¼ teaspoon onion powder
– Salt and pepper to taste
– Grated Parmesan cheese for topping (optional)

Instructions:

1. Preheat your oven to 375°F (190°C).

2. Cook the pasta shells according to package instructions until al dente. Drain and set aside to cool slightly.

3. In a large bowl, mix together the ricotta cheese, chopped spinach, ½ cup of mozzarella cheese, garlic powder, onion powder, salt, and pepper. If using, add the egg to help bind the mixture.

4. Carefully fill each pasta shell with the cheese and spinach mixture, using a spoon or your hands.

5. In a baking dish, spread 1 cup of marinara sauce on the bottom to prevent sticking.

6. Arrange the stuffed shells in the baking dish, then pour the remaining marinara sauce over the top.

7. Sprinkle the remaining mozzarella cheese and grated Parmesan (if using) over the stuffed shells.

8. Cover the dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.

9. Let cool for a few minutes before serving. Enjoy this nutritious meal with your little ones!
