Sweet Potato and Black Bean Tacos Recipe

Ingredients:
– 4 soft corn tortillas
– 1 medium sweet potato, peeled and cubed
– 1 can (15 oz) black beans, rinsed and drained
– 1 ripe avocado, diced
– ½ cup shredded cheese (cheddar or mozzarella works well)
– Olive oil
– Salt and pepper to taste
Instructions:
1. Preheat your oven to 400°F (200°C). Toss the sweet potato cubes with a drizzle of olive oil, salt, and pepper. Spread them on a baking sheet and roast for about 25 minutes, or until tender.
2. While the sweet potatoes are roasting, heat the black beans in a small saucepan over medium heat until warmed through. You can mash them lightly with a fork if your toddler prefers a smoother texture.
3. Once the sweet potatoes are done, mash them in a bowl until smooth. Mix in a bit of salt and pepper to taste.
4. Warm the corn tortillas in a skillet for a few seconds on each side until pliable.
5. Assemble the tacos by spreading a spoonful of mashed sweet potatoes on each tortilla, followed by a layer of black beans, diced avocado, and a sprinkle of cheese.
6. Serve the tacos with toddler-friendly taco holders to make it easy for little hands to build their own creations. Enjoy this nutritious recipe together!
