Vegetable Omelette Cups Recipe

Ingredients:
– 6 large organic eggs
– 1 cup fresh spinach, chopped
– 1/2 cup bell peppers, diced (any color)
– 1/4 cup onion, finely chopped
– 1/4 teaspoon salt
– 1/4 teaspoon black pepper
– Optional: shredded cheese, herbs, or cooked meats for added flavor
Instructions:
1. Preheat your oven to 350°F (175°C) and grease a muffin tin with cooking spray or use silicone muffin cups.
2. In a large mixing bowl, whisk together the eggs, salt, and pepper until well combined.
3. Add the chopped spinach, diced bell peppers, and onion to the egg mixture. Stir until the vegetables are evenly distributed.
4. Pour the egg and vegetable mixture into the prepared muffin tin, filling each cup about 3/4 full. If desired, sprinkle cheese or herbs on top.
5. Bake in the preheated oven for 15-20 minutes, or until the omelette cups are set and slightly golden on top.
6. Allow to cool for a few minutes before gently removing from the muffin tin.
7. Serve warm or store in an airtight container in the refrigerator for up to 5 days. These can also be frozen for longer storage.
