Ingredients:
– 2 cups whole wheat pasta
– 1 cup diced cucumbers
– 1 cup halved cherry tomatoes
– 1 cup diced bell peppers (any color)
– 1/2 cup shredded cheese (cheddar or mozzarella)
– 1/4 cup olive oil
– 2 tablespoons vinegar (balsamic or apple cider)
– 1 teaspoon honey (optional)
– Salt and pepper to taste

Instructions:
1. Cook the whole wheat pasta according to package instructions. Drain and rinse under cold water to cool.

2. In a large mixing bowl, combine the cooled pasta, diced cucumbers, cherry tomatoes, and bell peppers.

3. In a separate small bowl, whisk together the olive oil, vinegar, honey (if using), salt, and pepper to create the vinaigrette.
